Cheese Vegetable Olive Omelette (Perfect for Suhoor)

Ingredients:
- Eggs – 2
- Chopped onions – 2 tbsp
- Chopped capsicum – 2 tbsp
- Chopped tomatoes – 2 tbsp
- Olives (sliced) – 1 tbsp
- Cheese (cheddar or mozzarella) – 2 tbsp
- Salt – to taste
- Black pepper – ½ tsp
- Olive oil – 1 tsp
- Fresh coriander – a little
Method:
1. Break the eggs into a bowl and whisk well.
2. Add milk, salt, and black pepper to the eggs and mix.
3. Gently fold in the onions, capsicum, tomatoes, and olives into the mixture.
4. Heat olive oil in a non-stick frying pan.
5. Pour the egg mixture into the pan and cook on medium heat.
6. When the omelette starts to set on top, sprinkle the cheese over it.
7. Fold the omelette and cook for 2 more minutes to melt the cheese.
8. Garnish with fresh coriander and serve hot.
