Baked Chicken, Fries, and Veggies (for Iftar Dinner)

This is a complete and delicious Iftar dinner that includes juicy baked chicken, crispy fries, and lightly spiced vegetables.

Ingredients

For Baked Chicken:

  • Chicken leg pieces or breast — 4 pieces
  • Yogurt — ½ cup
  • Ginger-garlic paste — 1 tablespoon
  • Red chili powder — 1 teaspoon
  • Black pepper — ½ teaspoon
  • Salt — to taste
  • Lemon juice — 1 tablespoon
  • Soy sauce — 1 teaspoon
  • Oil — 2 tablespoons

For Fries:

  • Potatoes — 3 large (cut into long sticks)
  • Salt — to taste
  • Red chili or paprika — ½ teaspoon
  • Oil — 1–2 tablespoons

For Veggies:

  • Carrot — 1 (finely chopped)
  • Bell pepper — 1
  • Broccoli — 1 cup
  • Butter or olive oil — 1 tablespoon
  • Salt — to taste
  • Black pepper — ½ teaspoon

Method

Marinate the Chicken:

1.     In a bowl, mix yogurt, ginger-garlic paste, red chili, black pepper, salt, lemon juice, soy sauce, and oil well.

2.     Coat the chicken thoroughly in this marinade.

3.     Leave it for at least 1 hour to allow the spices to absorb properly.

Bake the Chicken:

1.     Preheat the oven to 180°C.

2.     Place the chicken on a baking tray and bake in the oven for 35–40 minutes.

3.     Flip the chicken once in between to cook evenly on both sides.

Make the Fries:

1.     Mix potato sticks with salt, red chili, and oil.

2.     Spread them on a baking tray.

3.     Bake in the oven for 25–30 minutes until golden and crispy.

Prepare the Veggies:

1.     Heat butter or olive oil in a pan.

2.     Add carrot, broccoli, and bell pepper.

3.     Add salt and black pepper and sauté on low heat for 3–4 minutes, keeping the vegetables slightly crunchy.

Serving:
Place the baked chicken on a plate, add fries and veggies, and serve with ketchup, chili sauce, or garlic mayonnaise for a delicious Iftar dinner.
